Once you have your pig via the above proven method:
Cuban Roast Pork
For every 3 lbs. meat:
1 tablsp salt
2 tsp. ground cumin
2 tsp. oregano
1 tsp. black pepper
1/4 tsp red pepper > mix all together except garlic
6 cloves garlic
1/4 cup lime juice
3/4 cup orange juice
2 tablsp. olive oil
Slit pork, insert garlic deep in meat. Pour and rub above into slits, and all over the pork, Roast in slow oven 300 for 6 hours turn once 1/2 way through or as appropriate to brown all sides.
