I know with external control heads you can deselect altitude hold with the ALT button. I don't know if the GDU allows deselecting the vertical component but I'm pretty sure there's a button for it....

With a baffle standoff and how low you mounted a 13 row cooler on the aft baffle I'm surprised #3 stays within 25*. Throwing more fuel to it addresses a symptom, not the problem. My opinion anyway....
